The Square Scullery’s delivery menu launches this weekend

For the last four years, Matt and Heather Ulichney have been rolling around Akron, serving “indie comfort food with a twist” from their food truck, Big Betty. From fried brussels sprouts, which is what they’re known for, to pork belly mac ‘n cheese, the Square Scullery has become one of Akron’s favorite food trucks.

“The plate is our canvas,” says Matt. “We put out artistic twist on everything.”

This weekend, they’ll be opening up Akron’s first “ghost restaurant.” Ghost restaurants serve food exclusively through online delivery services like GrubHub and DoorDash. In Matt and Heather’s case, they’re excited to also allow customers to stop into their new location on 783 West Market St. for pick-up orders.

This nontraditional way of approaching food entrepreneurship is typical for The Square Scullery, which has never followed a conventional path.

“Matt is so excited to be able to push his food out and start reaching so many other people. They might have heard of us, they might have tried us once before, but it’s hard to hunt down a food truck,” says Heather.

This move will allow the couple to serve food year-round, not just in the summer.

They’re not abandoning Big Betty, but they are looking forward to expanding their menu. Already, they’ve announced their ghost restaurant menu, which has over twice as many items as the food truck menu. Their menu is vegan and vegetarian friendly with some gluten-free options. The food is made from scratch with local ingredients. Matt says the new menu has one of his favorite dishes, chorizo and grits, which he says he “can’t get enough of.”

From an entrepreneurial standpoint, they’re both excited for what this means for Akron.

“It gives other entrepreneurs like ourselves the chance and opportunity to try something,” says Heather. “Even though it’s scary, this takes away some of the fear and risks and shows that there isn’t this cookie cutter mold that just works for everyone.”

The Square Scullery will be having a grand opening on March 15 and 16 from 4 pm – 10 pm. Seating and a cash bar will be open. (Details here.)

Customers will be able to order food from The Square Scullery from DoorDash, UberEats and GrubHub beginning March 17.
